What does the "S" mean inside of the slide's hammer notch?
It stands for "stainless," and refers to the slide being machined from stainless steel. Note that not all Sig Pro slides have this "S" engraved in the slide. Here is a photo of a Two-Tone SP 2340 slide with the "S," photographed from the bottom:
